What is a Paella?
Paella is, by its own merits, one of the most iconic dishes in Spanish gastronomy and a true symbol of Valencia’s culinary culture. Its origins go back to the rural areas of Valencia, where farmers cooked the rice from the Albufera with the ingredients they had on hand: chicken, rabbit, local vegetables, and even the famous and abundant “Albufera rat” (they used it due to abundancy).
Traditionally, the cooking was done over orange-tree wood (as Valencia is a region full of citrus fruits like orange and lemon), infusing the dish with a smoky aroma that connected the land, local products, and family traditions.
The traditional ingredients of Valencian paella are considered canonical: rice, chicken, rabbit, water, olive oil, tomato, saffron, flat green beans (bajoqueta), lima beans (garrofó), and salt. Some cooks also add paprika, rosemary, snails, or even artichokes when in season.
Today, Valencian paella remains the most representative version, but paella has evolved into countless varieties, each with its own personality, ones with, meat, fish, or even vegetarian ones. Beyond the traditional paella, you’ll find:
-
Seafood paella: with prawns, mussels, squid, and fish stock.
-
Black rice (arroz negro): made with cuttlefish or squid and coloured with natural squid ink. Everything you'll find in our A Fuego's Black Rice Cooking Kit
-
Arroz del señoret, which is trasnslated as “gentleman’s rice,” is characterised by having all seafood (peeled prawns, grouper, or chopped squid) peeled and cleaned before serving. In this type of paella, the seafood is cooked together with the rice.
-
Arroz a banda: on the other side we have the arroz a banda (rice on the side) which is done in fish stock, traditionally served with aioli. And with the fish served in another dish, apart (a banda)
-
Paella with ribs and mushrooms, rich, earthy flavours ideal for autumn. And this one is another one of the paella kits we have available.
-
Vegetarian Paella, the ingredients in this version can vary endlessly, but some favourites include: mushrooms, artichokes, green beans, red bell peppers, carrots, garrofones (Valencian large beans), sugar snap peas. This version of paella proves that you don’t need meat or seafood to enjoy an authentic and delicious dish.
Each of these highlights different ingredients of paella, showing the versatility of this iconic Spanish dish.

The rice: Short or medium-grain varieties like Albufera or Bomba, which absorb broth beautifully while keeping their texture.
-
The broth: Whether chicken, seafood, or vegetable, it provides the soul of the dish.
-
Saffron: Known as “red gold,” it gives paella its signature golden colour delicate aroma.
-
Paprika and fresh herbs: Paprika adds smokiness, while rosemary or thyme bring Mediterranean fragrance.
These essential ingredients of paella create the flavour balance that has made this dish world-famous.
